I acquired this book in the 80's and when I moved from Maine to Florida 11 years ago I left it behind thinking I could find all these recipes online and didn't need to carry all my heavy cookbooks with me. It was a huge mistake leaving this on behind!I spent a few years combing libraries and bookstores trying to find a copy and finally found one here on Amazon.This book has many classic recipes from the four most important schools of Chinese cooking; Peking, Canton, Shanghai and Szechuan. It describes the many spices and cooking techniques which has enabled me to make some of the best, healthful dishes I have ever tasted. There are eight different recipes for Hot and Sour Soup and guides for different kinds of diets (diabetic, ulcer and low salt), nutritional content and a wonderful section about tea.As you can tell, I really love it and am so pleased to have it back in my library.
